French Onion Soup
Yesterday was filled with yard work and house cleaning, my head was spinning, I had my menu set for the entire week but I wanted to just throw things in the crock pot and call it a day, it was hot yesterday and we had not tackled the yard in weeks! with the help of hubby we had the entire front, side and backyard completed in just a few hours. I was grateful for his help. Our yard was looking pitiful, for sure. I really wanted to spend the weekend by the ocean, but its looking like that won’t be happening anytime soon in the near future.
I threw the soup together rather quickly. Here’s how I did it.
What you will need:
- 5/6 Medium to large white onions
- Onion soup mix (2 packets)
- A stick of butter
- Red wine or sweet white wine
- Thyme (to taste)
- Oregano (to taste)
- Garlic (to taste)
- 4 beef cubes or (replace water with beef broth)
- 2 quarts of water (see above)
- baguette or french bread for topping.
- Gruyère cheese or Parmesan for garnish.

Place everything in your crock pot starting with the beef broth or water, than add onions, soup mix, the stick of butter, fresh thyme, oregano, garlic and then lastly wine. I used about 3 cups. I know call me crazy, most of it cooks down but MAN was the soup amazing. I cooked it on high until the onions reduced and the soup turned a beautiful brown and the fresh herbs cooked and fell off the stems.
I cut up a fresh baguette from our local market and placed it on top of the soup and garnished with shaved Gruyère cheese, and your soup is ready to enjoy. I like trying to make soups at least once a month, they are cheap to make and are SO filling.
